One of my favorite dishes is Shrimp Taco’s ! I can literally eat them everyday ! The mixture of all the fresh vegetables paired with seasoned juicy shrimp makes my mouth water , even while I am writing this article ! Follow us on Instagram so you can see the actual process of how they are made but in the meantime I will share the recipe below .
2 cups of whole shrimp – peeled and devained
2 whole ears of yellow corn
1/2 of a red onion
1 cup of pico de gallo (pre -packaged)
1/2 cup of mixed cheese
1 teaspoon of paprika
1 teaspoon of cayenne pepper
1 teaspoon of black pepper
2 cups of Spring Mix
1 pack of flour tortilla
Shuck your corn , as my Grandma would say into a bowl. You want to get that juicy corn away from the cobb to prepare to cook them until caramelized . I use about a 1/2 teaspoon of butter in a pan and cook corn thoroughly on both sides . Remove from heat and set aside .
Heat up your second pan with a 1/2 cup of extra virgin olive oil on medium heat . EVOO doesn’t take long to heat up so you should be able to add your shrimp in instantly . With shrimp sautéing add your paprika, add your cayenne and black pepper and stir until shrimp turns pink . Remove from heat .
I then pre-heat my oven to 350 degrees to prepare to toast the tortillas . I spread my tortilla out on a non stick baking sheet and put them in the over for five minutes .
While your tortillas are browning I cut up my red onions and prepare my pico de gallo . The spring mix comes already ready to serve but i pre-was all of my vegetables before eating .
Take you tortillas from the oven and let cool for about 3 minutes.
Now it’s time to build :
Place tortilla on plate , start off with sour cream or with our special homemade white sauce . (I can’t give out the receipt to the special sauce because its a secret )
Then you add your shrimp lining it above the special sauce or sour cream . Next you lightly dust your taco with the blended cheese. let sit for a second so the cheese can melt . Next add a spoon of your caramelized yellow corn . Layer your taco with spring mix, then you add pico de gallo . To finish it all off add red onions on top and there you have it . Easy to prepare , light on the waist and Instagram worthy !
